Popcorn is a great easy and healthy snack option. It's great because you can season it endless ways! And it's not expensive at all. :)
This recipe is excerpted from Myriad, An Informative Recipe Book Introducing Everyday Alternative Choices that I created in collaboration with Becca Reitz and Rosie Adams. It's now available as an eBook, see below for details!
- Place kernels in a brown paper bag and roll top closed. Place bag in the microwave and cook on high for 2 minutes, or until you don’t hear a kernel pop for 5 seconds.
- While popcorn pops, melt butter in a small saucepan. Add lime juice and cilantro; stir well. Remove from heat.
- Add popcorn to a large bowl and pour on half of the cilantro mixture, shaking to evenly distribute. Repeat with the rest of the mixture. Add salt and shake again until well mixed.
1/8 c. popcorn kernels
1 tbsp. butter, melted
1/2 tbsp. lime juice
1/8 c. fresh cilantro, chopped
