The Egg Bowl Recipe Collection

Eating clean and healthy is a constant challenge.

A few months ago, I was opening the fridge for the eighth time in 90 seconds desperately hoping something new would magically appear. All we had were some pepper and kale scraps, eggs, and a couple leftover new potatoes from a restaurant. "What the hell am I going to eat?" I silently whined. Then I got high and had a flash of brilliance. 

I've never been someone who likes salads, but I recently started making fruit sauces to substitute for dressing over my greens and actually liked it. It was that thought that lead me to this one: "Maybe I could make an egg salad, and use the yolk as my dressing."

So I sautéed up the piddly little remains of vegetables that were in the fridge, fried a couple eggs over easy, and tossed it all in a bowl with some sea salt and pepper. It was delicious. 

The best part was that this was a super-versatile concoction.  

I started experimenting with other veggie combos (after I went grocery shopping). I found that I really loved throwing a little Asiago cheese into the mix at the last second for some added flavor (and who doesn't love a little fried cheese), and sautéing my veggies in fresh bacon grease never hurt. But no matter what scraps lay around, I was usually able to make some kind of *healthy* meal for myself in under 15 minutes. 

Then there was a couple weeks when my roommates went out of town, and I was left to fend for myself. The first day, I just decided to cut up all the veggies I had available so that they'd be convenient throughout the week. Then when it was time to make a meal, I'd throw together whatever pieces I was feeling like and make a completely new combination. Even at the end of the two weeks, I don't think I could say I ever got tired of these because they were different every time! 

Below, I've created a collection of some of my favorite creations to help inspire you.

But remember, the best part of this approach is that it's fun — don't be afraid to try something you haven't considered before! You can really make one of these "egg bowls" out of anything in your fridge — there are endless opportunities for experimenting! You could even throw these combos on some bread for a little "treat yo self." ;) 

The veggies I prepped ahead of time:

  • green beans
  • zucchini
  • carrots
  • new potatoes
  • red and green peppers
  • sweet potatoes
  • yellow onion

Other ingredients I had on hand: 

  • bacon
  • Asiago cheese
  • Cheddar cheese
  • sea salt
  • fresh cracked pepper
