I'm a huge smoothie lover, but often the time it takes to cut up produce and the mess it makes in the blender keeps me from making these healthy treats. I'll normally just eat a couple of eggs or some oatmeal to cover my breakfast. This morning, though, I had a little extra time and decided that I needed some extra nutrients with my eggs, so I dug through the fridge for ingredients that might pair well.
1 c. grape juice - best if not from concentrate and with no sugar added (I would recommend cutting this in half - the grape juice was very sweet and a little overwhelming, but it did cover up the taste of the spinach nicely. Also, the smoothie was pretty thin, which is how I personally like them - if you like thicker, add less liquid and more Greek yogurt)
1 heaping tbsp. of plain Greek yogurt
1/4 c. unsweetened applesauce
1/2 c. blueberries
1 apple, sliced
Handful of spinach
Add ingredients to blender in order and pulse until mixed. Add ice if desired.
